As well as opening and operating a number of highly successful restaurants over the years (Currently operating are Ormeggio at The Spit, Chiosco by Ormeggio, 55 North, Postino Osteria. and a'Mare) Alessandro has significant experience in hotels from his time as Executive Chef at the Park Hyatt Sydney and Hyatt globally, and his current experiences working under management agreements and partnerships with hotel brands such as Crown and Accor.

 

He has consulted with several different restaurants around Sydney and internationally providing expert advice, including:

  • Menu design

  • Menu engineering

  • Financial control

  • Leading and inspiring teams

  • Venue and kitchen design 

  • Food Safety and Compliance

  • Project Managing new venues - from concept to design to liaising with all builders and tradesmen, to operational set up, to logistics of opening.
